Honey, due to its unique properties, does not require storage in the fridge, making it one of the most durable natural products. Its composition plays a key role – high sugar content and low humidity create an environment in which microbes are unable to develop. It acts as a natural preservative, which means honey can be stored for many years without losing its valuable properties.

In cool temperatures, faster crystallisation occurs, which changes the consistency of honey from liquid to grainy, which some people may find difficult for daily use. Although crystallisation is a natural process and does not affect the nutritional value or taste of honey, it makes the honey harder and more difficult to dispense. Therefore, storing honey in the fridge is not recommended. A much better place for its storage is a dry, dark place.

However, if you do not have a dry, dark place at home with a temperature not exceeding 18 degrees, the fridge can be a good alternative for storing honey. In such situations, storing honey in the fridge is a better solution than exposing it to high temperatures or light, which could degrade its properties. It is important to remember that even in the fridge, honey will retain its health and taste qualities.

2. Where is the best place to store honey?

To ensure honey retains its valuable health properties, the best place to store it is a dry, dark place with a constant temperature. The optimal temperature is between 8 and 18°C, because in such conditions, honey can survive for many years without losing its nutritional and taste properties. It is also important that this place is not exposed to large temperature fluctuations or humidity. Therefore, a cellar or a cupboard, away from the oven, radiators, and direct sunlight, is an ideal solution.

Another key issue is the tightness of the packaging in which we store honey. The jar or container should be well sealed so that the honey does not absorb moisture or odours from the environment. Honey is hygroscopic, which means it easily absorbs moisture from the air, and this can lead to its fermentation if stored in an environment that is too humid. Well-secured and stored in appropriate conditions, honey will stay fresh longer, retaining its health-promoting properties and taste.

3. Can honey spoil if it has incorrect storage conditions?

Honey, although one of the most durable food products, can undergo unfavourable changes if not stored in appropriate conditions. Thanks to its natural antibacterial properties and low water content, honey is resistant to spoiling in the classic sense. This means that bacteria and mould do not have favourable conditions to grow, allowing for its longevity. However, improper storage, such as excessive humidity or access to air, can affect the taste, texture, and overall quality of the honey.

In poor conditions, honey can absorb moisture from the environment, which leads to an excessive thinning of its consistency and can, in extreme cases, cause fermentation. This process will negatively affect its taste and lead to the loss of some health properties. That is why it is so important to store it in a dry place, at the right temperature, and in a tightly sealed container to prevent moisture absorption.

Crystallisation, often mistakenly considered a sign of honey spoilage, is a natural process and does not mean the product has lost its properties. On the contrary – crystallised honey retains all its nutrients and flavours, and if we want to restore it to its liquid form, it is enough to gently heat it in a water bath.

Honey does not need to be stored in the fridge. A dry, dark place at the right temperature is enough for honey to maintain its quality and consistency. The fridge can accelerate crystallisation, making the honey hard and less convenient to use. Therefore, the best solution is to store honey in a kitchen cupboard, tightly sealed, away from heat sources. Thanks to this, honey will retain its natural properties for a long time.
