1. Why add honey to a glaze?
Adding honey to a meat glaze is an excellent way to enrich the flavour of the dish. Honey brings a natural sweetness that balances spicy and sour ingredients, such as vinegar, garlic or mustard, creating a harmonious, balanced flavour composition. During roasting, the sugars contained in the honey undergo caramelisation, which creates an appetising, slightly crispy and shiny coating on the surface of the meat, which not only looks beautiful but also contrasts pleasantly with the juicy interior.
Honey is also a natural ingredient that replaces artificial thickeners, sweeteners and preservatives often present in ready-made glazes or marinades.
What is more, it creates a delicate protective layer on the surface of the meat, which prevents excessive drying during roasting, especially in the case of more delicate meats such as poultry.
It is also worth emphasizing that different types of honey pair perfectly with specific types of meat – intense buckwheat honey is ideal for beef, mild phacelia honey highlights the flavour of pork, and subtle acacia honey gently enriches poultry dishes. This makes it easy to match the honey to the type of dish and achieve a unique culinary effect. Honey in a glaze is therefore not just a flavour additive, but also a way to improve the appearance, aroma and structure of the prepared meat.
2. Beef in a glaze of buckwheat honey – deep flavour and tenderness
Beef requires a proper marinade to be tender and juicy after roasting. Buckwheat honey, which has an intense flavour and a delicate spicy aroma, works perfectly here.
Ingredients:
- 2–3 tablespoons of buckwheat honey
- 1 tablespoon of apple cider vinegar (tenderises the meat)
- 1 clove of garlic (finely chopped or pressed)
- 1 teaspoon of Dijon mustard
- 1 teaspoon of flour (for thickening)
- 1 tablespoon of mayonnaise
- 2 tablespoons of olive oil
- Spices: black pepper, sweet paprika and smoked hot paprika – a flat teaspoon of each
- juniper berry
- sprig of rosemary
Preparation:
Mix all the ingredients and rub them thoroughly into the meat (e.g. beef tenderloin or shoulder). Marinate it in the fridge overnight. Thanks to the apple cider vinegar, the beef will tenderise, and the spices and honey will penetrate deep into the structure of the meat. Before roasting, place a sprig of rosemary on the meat; it will release a beautiful aroma.
Roasting:
Preheat the oven to 160–170°C. Roast the meat covered for 2.5–3 hours (depending on the piece) until it is tender and juicy. For the last 20 minutes, remove the cover to allow the glaze to caramelise slightly.

3. Pork in a glaze of phacelia honey and a hint of citrus
Pork loves sweet-spicy combinations. Phacelia honey, delicate and floral, pairs perfectly with spices and mustard seeds, while orange juice adds freshness.
Ingredients:
- 2–3 tablespoons of phacelia honey
- 1 teaspoon of dried mustard seeds (crushed in a mortar)
- 2 tablespoons of honey mustard
- 2 cloves of garlic (chopped)
- 1 teaspoon of peppercorns (also crushed)
- 1 bay leaf (broken into pieces)
- 3–4 tablespoons of orange juice and a few chopped segments
- 2 tablespoons of olive oil
- Spices: dried thyme, rosemary, half a teaspoon of nutmeg
Preparation:
Mix all the ingredients thoroughly and rub them into the pork neck, ham or ribs. The meat should marinate for at least 6 hours, preferably overnight.
Roasting:
Preheat the oven to 180°C. Roast the meat for approx. 1.5–2 hours (depending on thickness), basting from time to time with the resulting sauce. Towards the end, you can increase the temperature to 200°C so that the skin is lightly browned and shiny.

4. Poultry in acacia honey – light, aromatic, citrus-herb
Delicate poultry meat goes perfectly with acacia honey, which is light, mild and does not dominate the flavour. Ideal for chicken or turkey.
Ingredients:
- 3–4 tablespoons of acacia honey
- 4 tablespoons of mild olive oil
- 2 flat tablespoons of honey mustard
- 5 medium cloves of garlic (chopped or pressed)
- 4 tablespoons of lemon juice
- A handful of chopped herbs: e.g. rosemary, oregano, thyme
- Spices: 1 flat tablespoon each of sweet paprika and salt, 1 flat teaspoon each of pepper and hot paprika
Preparation:
Marinate the thighs, breasts or wings in the prepared mixture and leave in the fridge for at least 2 hours.
Roasting:
Preheat the oven to 180°C. Roast the poultry for about 45 minutes (fillets – shorter, about 30 minutes) until it is tender and juicy. At the end, you can set the grill function to make the skin crispy.

5. Recommended honeys for meat glazes
Choosing the right honey for a glaze is of great importance for the final flavour of the dish. Different types of honey have their unique properties – some are delicate and slightly sweet, others distinct and even slightly bitter. This allows you to choose honey not only for the type of meat but also for the desired intensity of the marinade's flavour.
Linden Honey - distinguished by a slight bitterness and subtle sharpness. Its characteristic aroma makes it perfectly suited for beef, especially when roasted or stewed, giving it depth and a delicate edge.
Acacia Honey - is one of the most delicate honeys. It remains liquid for a long time, so it spreads perfectly in glazes. Its mild flavour makes it ideal for chicken, turkey and other light meats.
Buckwheat Honey - has a tart, slightly bitter and very distinct flavour. It is a honey with character that perfectly emphasizes the intensity of beef. In a glaze, it creates a deep, slightly spicy aroma that works particularly well in roasts.
Rapeseed Honey - has a fairly shallow, mild flavour that easily absorbs the aromas of spices and additions, making it pair excellently with mustard and herbs. It is recommended for pork and poultry, as it gently highlights the flavour of the meat without dominating it.
Phacelia Honey - is a honey with an exceptionally mild, floral aftertaste. It is light, fresh and subtle, which is why it works perfectly in turkey, chicken and other delicate meat dishes, where the goal is a harmonious background rather than an intense flavour.
Multiflower Honey - is the most universal option. It has a balanced, naturally sweet flavour and pairs well with various types of meat – from poultry to pork and beef. It is a safe choice if we are not sure which honey will work best in our dish.
