2. Recipe for honey cookies

Ingredients (for approx. 20 cookies):

  • 1 and 1/2 cups of oat flakes
  • 1/2 cup of wheat flour (or spelt flour)
  • 1/2 teaspoon of cinnamon
  • 1/3 cup of multi-flower honey
  • 1/4 cup of coconut oil or butter
  • 1 egg
  • 1/2 teaspoon of baking soda
  • A pinch of salt
  • Optional: a handful of raisins, nuts or dark chocolate

Preparation:

1.Preheat the oven to 180°C. Line a baking tray with baking paper.

2.In a saucepan, heat the coconut oil with honey – only until combined.

3.In a large bowl, mix the dry ingredients: flakes, flour, cinnamon, baking soda, salt.

4.Add the wet ingredients: the honey and oil mixture and the egg. Mix everything until a uniform mass is obtained.

5.Add your favourite extras (e.g. nuts or raisins).

6.Place portions of the dough on the baking tray with a spoon, flatten slightly.

Honeys with a mild flavour and light colour work particularly well for baking cookies, as they do not dominate the other ingredients, while simultaneously giving the cookies a pleasant sweetness, moisture and delicate aroma. 

Multi-flower Honey – universal and very popular. Its taste depends on the time of harvest and the type of flowers it comes from, but it is usually mild and sweet. It blends perfectly with most cookie recipes, especially oat, spiced or with the addition of nuts.

Rapeseed Honey – very delicate, creamy and light. It has a subtle, slightly floral taste that does not dominate the bake. Thanks to its high glucose content, it binds the dough well and makes the cookies soft and moist. Particularly recommended for shortbread cookies and sponge-like baked goods.

Acacia Honey – the mildest of honeys, almost neutral in taste, with a light, almost transparent colour. Ideal if we do not want the honey to change the taste or colour of the cookies. It works great in delicate bakes, e.g. with the addition of vanilla, citrus or white chocolate.
