1. Honeydew honey - how is it made and what is it?

Honeydew honey is a type of honey produced by bees from honeydew, which, like nectar, is a sweet liquid derived from sap. To better understand what honeydew honey is, we must know that bees can produce honey by collecting and processing two different nutrients: nectar and honeydew. However, honeydew, unlike nectar, is not produced directly from plants, but from insects that take sap from plants to live and reproduce, secreting a product still rich in nutrients, especially sugars: honeydew. Droplets of honeydew stick to leaves, branches, bark and so on; bees find it, collect it and thanks to their work produce honey. From an organoleptic point of view, the taste is less sweet and the colour is darker than nectar honey and it remains liquid for a long time. One of the nectar honeys that perhaps most resembles honeydew honey is chestnut honey (not very popular in Poland).

The composition of honeydew varies depending on its place of origin. Generally speaking, as we said, it is a sweet liquid. Regarding the composition, we can add that the most present sugar is sucrose. Moreover, compared to nectar, it contains a larger amount of polysaccharides (oligosaccharides), especially melezitose. In addition to sugars, there are small amounts of amino acids, proteins, minerals, acids and trace amounts of vitamins in honeydew.

Forest honeydew honey remains in a liquid state for a long time, but it may undergo crystallisation. Its colour ranges from dark amber to almost black. The smell of honeydew honey resembles overcooked jam, green tomatoes, fig preserve. The taste is much less sweet than nectar honey, and sometimes it is slightly salty or acidic. The aroma then resembles tomato sauce, fig preserve, malt, dates.

Honeydew honey is so different from nectar honey that it attracts people who normally do not love honey. Its aromatic complexity is delightful. When it comes to pairings, honeydew honey goes perfectly with medium-bodied, dry, not too fatty cheeses. The malty aroma makes it interesting together with milk. Due to its aromatic complexity, honeydew honey is likely suitable for many other combinations.

2. Antibacterial and anti-inflammatory properties of honeydew honey.

Raw honey, used for centuries to support wound healing, has natural antibacterial and anti-inflammatory properties.
